Dry potato stir-fry

Ingredients

  • 3 Potatoes - Washed, Peeled and Cubed into tiny cubes
  • 1 tsp Red Chilli Powder
  • 1 tbsp White Sesame Seeds (Til or Nuvvulu)
  • 1/2 tsp Turmeric Powder
  • Salt to taste
For Seasoning
  • 2 tbsp Oil
  • 1 tsp Mustard seeds
  • a few curry leaves

Method

  1. In a pan, heat the oil.
  2. Add the mustard seeds. Once the splutter, add the urad dal and saute until light brown. Then add the hing and curry leaves.
  3. Add the cubes of potato. Mix well until the seasoning and oil is well coated.
  4. Add the turmeric powder, red chilli powder and salt and mix well.
  5. Sprinkle 1 tbsp of water on the potato mixture, cover with a lid and cook for about 3 to 4 minutes on a low flame.
  6. Open the lid and gently stir until all the potato is well roasted. This usually takes about 10 minutes on a medium to low flame.
  7. Toss in the sesame seeds and mix well.
  8. Serve hot with rice, dal and ghee!
