Chapati/Paratha med Atta

Ingredients

  • Whole Wheat Flour - 1½ cups (3.5 dl)
  • Oil - 3 tsp
  • Salt - ½ tsp (mer än så!!)
  • Warm water - ½ cup (1.3dl) + 2 tbsp
  • Whole Wheat Flour – ½ cup (1.2 dl)
  • Oil for pan frying

Method

In a large bowl, mix the flour and salt well. Add oil and mix again to incorporate the oil into the flour. Slowly add warm water and knead to form a dough. Shape dough into a ball and rub a few drops of oil on it to coat. Cover and let it stand for at least 15 minutes.

Knead dough once more and divide it into 9 ping pong size balls. Roll each ball in your palms and press into a flat circle. Put ½ cup of whole wheat flour in a flat bowl or dish. Dip a flattened ball into the dry flour and coat it on all sides. Using a rolling pin, roll out each ball into a flat disc – similar to a tortilla. Keep dipping the dough into the dry flour while rolling so it doesn’t stick.

Heat a tava or skillet on medium heat. Place the rolled chapatti on the skillet. When bubbles start to form, flip the chapatti over. After about 10-15 seconds, smear the chapatti with a little oil and flip over. With a spatula, press the chapatti to make it balloon up. Smear the other side with a little oil and flip over again. Keep pressing on the bubbles gently to make the entire chapatti rise up. Chapatti is done when all the raw dough appears cooked.

##Chapathi á la Ranjini

  • 2 dl flour
  • 0.5 tsk salt
  • ~1 msk butter
  • lite vatten

Gör så här

Take wheat flour (make sure it is not the finest quality, graham - använd BARA vetemjöl enl. Gunlög, annars blir de torra och hårda!), add salt and mix thoroughly. Add water to make the paste until the dough sticks to your hand. Press gently and add butter so that it get away from your palm. Continue pressing until the dough became a one big globe without any skrynkor. Keep it away for half-an-hour. Have a piece of cloty or lid on, so the surface does not dry! After half-an-hour make small balls and make chapathi out of it!

##Chapatti utan atta

Ingredienser

  • 3 dl vetemjöl
  • 1 dl grahamsmjöl
  • 1/2 tsk salt
  • 1/2 msk olja
  • 1 1/2 dl ljummet vatten

Gör så här

Blanda mjölsorter och salt. Tillsätt olja och ljummet vatten. Knåda till smidig deg (5min). Låt degen ligga 30 minuter under handduk.

Sätt på torr panna, medelvärme (se till att den är varm ordentligt från början). Knåda och dela i 10 delar. Kavla tunt! (men inte för tunt, då blir det hårt). Värm i pannan på båda sidor. Inte för länge, men måste vara genomstekt. Pensla med lite smör och lägg i en handduk.
